FST2131 Confectionery and Beverage Technology

This course module provides an integrated overview of the basic principles, technologies and their applications in confectionary and beverage industry. The content of this course basically includes tea, tisanes, cocoa and coffee production and value addition; production of carbonated beverages & quality attributes; Sports Nutrition beverage formulation; brewing and fermented alcoholic beverage production, spirits;  mineral water and their quality attributes; introduction and classification of confectionaries, production process, quality parameters and defects of sweets, production of chocolates and quality attributes.
